We went to a party not too long ago, while my friend Jenn was in the middle of her 30 day "No Sugar, No Grains" challenge. I wanted to bring something that she could eat... and enjoy. I decided to pull together some bacon wrapped dates, stuffed with almonds and goat cheese.
If I left a plate full of crack in the middle of (insert name of street in your town or a neighboring city that is rumored to play host to drug dealers - it could be any street, really) those rocks STILL wouldn't have gone as fast as these little numbers.
Here's the recipe-ish. I estimated quantities as best as I could, as Kelly and I just bought a ton of bacon and dates and went to town. Bake, drool and enjoy.
- 1 pound of bacon, slices cut in half
- 1 pound of dates (pitted - you may have to do this yourself)
- Almonds (either slivered or sliced)
- Goat cheese
Arrange on a rack with a tray underneath, so they don't end up sitting in grease. Bake at 400 degrees, until bacon starts to get crispy. (I think this was around 25 minutes, but don't quote me.) Serve hot or cold, if they last that long.
Got anything delicious involving bacon? Send it. Like, literally send it to me. Overnight it if you have to, because bacon is best eaten fresh. (Or you can just post recipes to comments, I guess.)

I baked organic chocolate chip cookies last week but I didn't have any healthy butter so instead of using shortening or butter I used bacon fat... yup, that's right, bacon fat. The pigs I eat are apple-fed so it was all good.
The cookies were delish... salty and sweet. Next time I'll probably use slightly less bacon fat cause those were some greasy mauther-fauckers but they were a hit nonetheless.
I'm pretty sure you can become a fan of bacon on Facebook. ;)

Ever had candied bacon?
Lay a pound of bacon flat on a baking sheet with a rack.
Sprinkle with brown sugar and cajun seasoning to taste
Bake until done
Eat until gone!
You can also take the bacon above, before cooking, cut in half and wrap around bite sized pieces of chicken breast and bake at 400F for 20-25 minutes or until done.
These never last very long at my house...

'Kay, here's what we do for pretty much any Bridger Crossfit function. It's called a meat log.
Make a lattice out of two pounds of bacon.
Spread 2 lb. ground beef, and 2lb. sausage on top.
Roll it up, grill it for 45 minutes or so, then finish it in the oven. Season with salt, pepper, and whatever else you think a bunch of meat wrapped in bacon needs.
Keep fingers clear.

Instead of dates....used cream cheese and some type of pepper.
Jalepeno is good, use habenjeros if you're feeling brave. But remember, those bad boys are not forgiving if you leave a seed in!

i threw some bacon strips into the chicken liver/peppers/onion mix that i made a few weeks ago. if you're big on organ meat, you can't go wrong there

Bacon Wrapped Grilled Asparagus
Wrap 1 whole piece of asparagus with 1 whole piece of bacon and skewer with 2 skewers, 1 on each end of the asparagus to hold together and make it easy to flip. Put as many on the skewers as you want. Throw on the BBQ and enjoy!

I am a first-time commenter on your blog. I felt the need to post one of the best "candy" bacon recipes I've found thus far and it's super easy. Mix equal parts Dijon mustard and brown sugar (I never measure), lightly (or heavily) coat your favorite bacon and bake in the oven at about 375/400 degrees for about 20-30 minutes. The time of cooking depends how you like your bacon, soft and chewy or a little crispy. It's killer!!
